		<description>I just noticed this post and I must agree with your assessment of Ruhlman&#039;s &quot;Ratios&quot;.  This is a &quot;must-have&quot; book for any cook&#039;s kitchen.  It reminds me of the way my grandmother used to cook: solid know-how and tons of inspiration.  I think that understanding the ratios of basic foods frees a cook to explore outside of the limitations of cookbooks and set recipes.</description>
